Vegetable Tortellini Soup
This soup is a complete meal in a bowl.

- 150 g courgette
- 150 g carrot
- 100 g dried tortellini
- 60 g finely chopped onions
- 30 g finely chopped leek
- 700 ml vegetable stock
- pepper & salt, to taste
- Parmesan cheese, to garnish
- Halve the courgette lengthways and cut into 2 cm pieces; peel the carrot and cut into 1 cm cubes.
- Place all of the ingredients into the soup maker, close the lid and select the chunky soup program.
- When the soup is ready, open the lid, pour into bowls and sprinkle with some Parmesan cheese.
